Ingredients
1 cup of cooked Jasmine Jollof rice

Grilled Fish, beef or shrimp

Efo riro (Kale, Collard greens or Spinach)

Bell Peppers (seasoned and sautéed in butter)

Plantain, Avocado, Beef or any topping of choice

1 Bamboo mat (rolling mat)

Nori (sea weed sheets)

Plastic wrap (optional)

Instructions
1. Wrap the bamboo mat in a plastic wrap and place a sheet of nori on top (the shiny part of the nori should be placed downwards).

2. Carefully spoon some of rice across the surface of the mat except the 2 inch strip along the edge farthest from you.

3. Then follow by laying the fish/beef/shrimp over the rice and on top of the, toward the top of the mat, lay the sliced peppers, greens, avocado and other toppings.

4. Then carefully lift the top end of the mat and roll the spread of rice over the peppers, cucumbers and avocado. Press down gently but firmly to secure the cylindrical shape of the resulting sushi role.

5. Continue to roll over the rice with mat until until you get to the end of the mat. Press down on the mat to secure the rice and the filling.

6. Then remove the mat carefully and slice the sushi roll into bite-size pieces. Use a very sharp knife, rinsing after each cut, to get through the slice without crumbling the rice or dislodging the filling.

Your Nigerian Jollof Sushi is ready! Serve with any sauce of choice.
